Berry Overnight Oats with Collagen Recipe

Our resident nutritionist Jenna Hope is back again with some more healthy collagen recipes. Read how to make a collagen overnight oats.

Let’s face it, life is busy and focussing on eating a healthy diet can sometimes be challenging. That’s why I often rely on pre-prepped breakfasts and this Berry and Coconut Overnight Oats is my absolute go to. It’s packed with fibre, omega-3, antioxidants, healthy fats and protein to keep you fuller for longer. I also use this as a vehicle to get my Absolute Collagen Marine Collagen Powder into the diet. It provides 8,000mg of marine collagen and 60mg of vitamin C to support skin hydration and elasticity.

This recipe can be prepped in bulk to save you time for the week too!

Ingredients:

  • 45g Oats
  • 10g Chia seeds
  • 1 Scoop Absolute Collagen Marine Collagen Powder
  • 150ml Oat milk
  • 2 Tbsp Coconut yoghurt
  • 40g Fresh Strawberries
  • 1 Tbsp Desiccated coconut

Method:

1. Add the oats, chia seeds and collagen to a bowl and stir well.

2. Next, stir in the coconut yoghurt and oat milk.

3. Once well combined, place in the fridge to allow to set.

4. In the morning, top with fresh strawberries and desiccated coconut. Enjoy!
